Named for the sweet fruit that proliferates the Andes mountains, "chirimoya" is a community-grown coffee "blend" from several family farms spanning 150 hectares.  The coffee is depulped, anaerobically fermented for up to two days before a thorough washing and then dried slowly in the shade on raised beds.  After a career in coffee logistics and export, Galo Flores and his wife Maria Alexandra Rivera are focused on bringing in new growers to their operation and increasing their quality as they carefully scale operations and give access to more of their neighbors to grow beautiful coffees for all to enjoy.
