The blend that started it all. Leviathan is our flagship espresso — the same coffee that won America's Best Espresso at CoffeeFest Portland in 2015, and the shot we pull at all three of our Seattle cafes every single day.

The blend is 70% natural Ethiopia Guji and 30% washed Brazil. The Guji brings the fruit — a cherry cola sweetness and ripe plum character that's unmistakable. The Colombia adds structure: clean acidity, brown sugar depth, and a dark chocolate finish that lingers. Together they produce a shot with rich crema, a syrupy body, and enough complexity to drink straight or cut through milk.

We've tuned this blend over years of daily production. It's forgiving enough for home espresso machines and rewarding enough for seasoned baristas dialing in on commercial gear. And while we built it for espresso, it works across brew methods — it's especially good as a pourover if you want to pull apart the fruit and chocolate layers.

Dose: 19.5–20g
Yield: 44–48g (1:2.25–1:2.5 ratio)
Time: 24–27 seconds

This is our cafe recipe — a slightly longer ratio that lets the fruit sweetness develop without losing body. If you prefer a tighter, punchier shot, try pulling 1:2 (38–40g yield) and adjusting grind finer.

Also works well as:
· Pour over (V60 or Chemex) at 1:16 — opens up the plum and cherry cola notes
· AeroPress — inverted method, 14g dose, 200°F, 2 min steep
· Moka pot — brings out the chocolate and brown sugar, closest to espresso without a machine
